You can eat leftover sushi that has raw fish in it within 24 hours as long as it has been refrigerated. You need to make sure the raw fish does not stay out of the fridge for too long.

If you want to eat leftover sushi that does not have any raw fish in it, it is going to last longer in your fridge. If the sushi has just fresh veggies in it, it should last in your fridge between 5 and 7 days.
Storing Leftover Sushi

If you plan on storing your sushi in your fridge, you do need to make sure that you put the leftover sushi in an air tight container. You should refrigerate the sushi within 20 to 30 minutes, especially if it has raw fish in it. Sushi can be refrigerated in its original restaurant packaging as long as it has been fully sealed tightly.
