Broccoli is loaded with essential vitamins, but it can be hard to find when it's not in season. This vegetable freezes well for up to a year, especially if it's blanched beforehand. During harvesting, broccoli loses a lot of its nutritional value but if prepared and frozen quickly, it can contain more beta-carotene than when fresh.
